Steps
  1. Add enough hot water to cover the rice and let it rest for half an hour. Chop the chestnuts and set aside. Remove the core of the cabbage by hollowing it out. Boil the cabbage upside down in a pot that can fit the whole cabbage and keep it slightly firm.
  2. Put the onion and olive oil in a pot and start sautéing. Wash the rice well to remove its starch. Add the rice and pine nuts to the onion and continue sautéing. Add currants, sugar, black pepper, cinnamon, allspice, salt, and 1 cup of hot water. When the water is absorbed, let it cool slightly and mix in the chestnuts.
  3. Divide the cabbage leaves in half and cut out the tough vein parts with a knife. Place a layer of cabbage leaves on the bottom of the pot, distribute a teaspoon of filling to each remaining leaf and roll tightly. Arrange the rolls on top of the leaves in the pot without gaps. Place a plate on top, add enough water to cover. After it starts boiling, cook on medium heat for 20 minutes and drain the water.
